2 dash orange bitters

3 sage leaves

Muddle the bitters and 3 sage leaves in a shaker. Add ice and all other ingredients. Shake and double strain into a cocktail glass.

0.75 oz St Germain Elderflower Liqueur

1 oz Lemon Juice

1 oz Verbena Blue Tea Syrup*

1 egg white Method: Dry shake all ingredients.

Add ice and shake a second time. Double strain into a coupe glass. Garnish with Verbena Blue Tea leaves

*Tea syrup method:

  • 1 cup water

  • 1 cup sugar

  • 4 Verbena Blue Tea teabags or 4 tablespoons loose leaf

Verbena Blue Tea Method: Combine all ingredients in a saucepan and bring to a boil, stirring frequently so that the sugar does not burn. Once the sugar has fully dissolved remove from heat. Remove tea bags or strain once cooled.

1oz Fresh Lemon Juice

.5oz Egg White

Garnish – Mint sprig

Method – Combine all ingredients into shaking tin filled with ice. Shake and fine strain into a chilled coupe glass. Garnish with a mint sprig floating in middle.

To make Cloudberry Puree In a blender, add 1 pint of fresh cloudberries and blend on high until fully pureed. In a separate large batching vessel, combine equal parts cane sugar and hot water. Stir to dissolve sugar. Add cloudberry puree and simmer for 5 minutes, stirring constantly. Refrigerate overnight.

*Blackberries may be used in place of cloudberries as flavour profile is similar
