1oz Hounds Vodka
.75oz St. Germain Elderflower Liqueur
.75oz Cloudberry Puree
1oz Fresh Lemon Juice
.5oz Egg White
Garnish – Mint sprig
Method – Combine all ingredients into shaking tin filled with ice. Shake and fine strain into a chilled coupe glass. Garnish with a mint sprig floating in middle.
To make Cloudberry Puree In a blender, add 1 pint of fresh cloudberries and blend on high until fully pureed. In a separate large batching vessel, combine equal parts cane sugar and hot water. Stir to dissolve sugar. Add cloudberry puree and simmer for 5 minutes, stirring constantly. Refrigerate overnight.
*Blackberries may be used in place of cloudberries as flavour profile is similar
